I know, I know, it sounds kinda weird. But I promise it tastes amazing! And a small portion is already super filling as well:) There's a reason I put this at the top of this list!
I LOVE CONGEE! I think we need to destigmatize congee, you know? It's not just for sick people.
But yeah this was super easy to make:) All you do is chop up all the stuff, add it to a giant pot and boil it for a long time. I think it tastes amazing!
I loosely based it off of this recipe, but then I also added some chicken and a lot of ginger:)
The Spring Onion Paratha on the side is just a frozen store bought one!
3. Hong Kong Style Russian Borscht (羅宋湯) with Pasta!!!
This is one of my all time favorite 茶餐廳 orders like literally if I see this on the menu, there is a 99% chance that I will get it!
This was way easier than I anticipated and I think it tastes quite similar to the ones back home!
4. Garlic Butter Pork Chop with Mashed Potatoes and Green Beans
I think this speaks for itself. The simple flavors go so well with one another and I don't think there is any way to describe this other than delicious!
5. Homemade Pesto!!! with Roasted Chicken Breast and Cherry Tomatoes
I didn't that there was such a massive difference between store bought and fresh pesto! Like store-bought ones are not bad... until you taste the homemade ones. Super thankful for my food processor 🙈
Now this one. THIS ONE. Can I even describe how excited I was to find this recipe?? I was like really craving pepper lunch but there aren't any near me, so this was just like... wow! It tasted similar enough to the original one.
But you know, if I'm really honest... I'm kinda disappointed. I'm disappointed by how easy and how cheap this is to make! Makes me feel like I wasted money buying from pepper lunch before, when I could just make it at home.
(I used cooked salmon flakes rather than beef. I normally order salmon from Pepper lunch anyway.)
7. Garlic Roasted Butternut Squash and Kale Wheatberry Salad with Pomegranate!
Wow... that was a mouthful :P But the combination of flavors is great, and this is is just a very filing salad with loads of nutrients.
Sounds super heavy but I feel like it's not as heavy as you would imagine it to be... The flavors work so amazingly together and I feel like it's just the perfect comfort food
9. Butter Chicken :D
(Naan is store-bought.) This is just a classic, isn't it?? This one tasted pretty amazing but I think it's probably not that authentic... I enjoyed it tho :D
10. Hummus bowl
This was SO YUMMYYYYY. Like I was looking forward to my meals when I knew I had prepped this. And it's super healthy too!
I made my own hummus in the food processor, which was really easy and it does taste better.
The only reason this is at the bottom of this list is because half of the stuff in this bowl is store-bought lol. So the Falafels, Italian Flame-Seared Artichoke, and Roasted Bell Peppers are all from M&S.
All I did was chop up some cucumbers and cherry tomatoes, roasted some courgettes and baby aubergines, threw everything together and topped with some paprika and Feta cheese:D
